Top 8 Allergen-Free French Toast

Just because you have allergies doesn't mean you can't enjoy delicious breakfast favorites. In fact, this one is so yummy that our non-allergic family members eat it up for breakfast too.

The impetus for creating this recipe was when we couldn't find a safe egg substitute that we could make a more traditional french toast with, as many of the egg substitutes out there are designed for people who have dietary preferences as opposed to food allergies. We also didn't have on hand many of the ingredients used in other vegan french toast recipes online. But need breeds creativity, and this was one that we whipped up on a whim...and it turned out amazing!
Ingredients for French Toast spread:
2 tbsp oat flour (which you can make by blending steel-cut oats into a fine flour)
1 tsp ground cinnamon (we particularly like the Spicely brand, as it is safe)
Pinch of salt
1 tsp vanilla extract
0.5 cup of soy milk or rice milk if you are soy-free
1 tbsp of Earth's Balance Buttery Spread
Bread:
Use your favorite gluten-free bread from your local store. Our recipe for gluten-free bread is forthcoming.
Directions:
Mix the oat flour, cinnamon, salt, vanilla extract, and milk substitute. Pour into a shallow bowl or serving plate.
Coat each slice of bread with the mixture on both sides.
In a skillet, heat up the Earth's Balance Buttery Spread. Pan fry each side until a slight golden brown.
Top with powdered sugar and berries of your choice.
